Do you like oatmeal raisin cookies? When they’re soft and flavorful, they’re one of my favorites!
Raisins kind of get a bad rep for being boring, but these cookies are anything but that. I swapped the dried grapes for cranberries. I think the tartness of craisins is the perfect contrast for the warm sweetness of brown sugar.
You could make these with raisins, craisins, or even dried blueberries. If you want to add chocolate chips or nuts, substitute part of the cup of craisins. (I’d do half a cup of each.)

How to make oatmeal craisin cookies
Ingredients
- 0.75 cup butter, soft (1.5 sticks)
- 1 cup brown sugar
- 0.5 cup white sugar
- 1 teaspoon baking powder
- 0.25 teaspoon baking soda
- 2 whole eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup oats
- 1 cup dried raisins, cranberries, or your fruit of choice
Instructions
1. Cream butter and sugar.
Start by dicing the butter into cubes and letting it sit at room temperature until it is soft. Add the butter to the bowl of a stand mixer and beat with the paddle attachment to spread. Add the brown and white sugars, baking powder, and baking soda. Beat until just combined.

2. Add the wet ingredients.
Next, add the eggs and vanilla. Beat again until thoroughly combined.

3. Add the dry ingredients.
Add the flour. Mix slowly a few beats, then increase the speed to blend in all of the flour.

4. Combine oats and fruit.
In a small bowl or large measuring cup, add the oats and the craisins. Separate the craisins if they’re clumped together and toss them gently with a spoon. This helps the fruit stay spread out evenly.

5. Bake.
Chill the cookie dough in the refrigerator while you preheat the oven to 375 degrees Fahrenheit and line 2 baking sheets with parchment paper.
Scoop the cookie dough in rounded tablespoons onto the baking sheet, at least 2 inches apart. These spread a good amount. Bake at 375 for 10-12 minutes per batch.

Let the cookies cool on the baking sheet for a minute or 2, then remove to a cooling rack. These will set soft, but not crumbly.

These cookies are chewy and soft. Store them in a covered container at room temperature for a couple of weeks.
