Pumpkin spice has kind of gotten a bad rap. I think it’s because so many pumpkin spice flavored things include pumpkin. But pumpkin spice is the little spice blend that you add to pumpkin. It’s cinnamon and a few other earthy spices, and it’s delicious in lots of other recipes.
These pumpkin spice sugar cookies are sweet, but not too sweet. They taste a bit like a snickerdoodle with more depth. Or a ginger snap that’s soft.
You can just mix, scoop, and bake for a soft, chewy cookie. If you prefer a thinner cookie, flatten the dough with the bottom of a glass before baking. If you’d like a sweeter cookie, you could roll these in cinnamon sugar like a classic snickerdoodle.
This is a small batch recipe and makes about 1.5 dozen 3-inch cookies. You can easily double it (or more) if you’re making these for the holidays.

How to make pumpkin spice sugar cookies
Ingredients
- 1/2 cup butter, softened
- 2/3 cup brown sugar
- 1/4 cup milk
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon nutmeg
Instructions
1. Cream butter and sugar.
In the bowl of a stand mixer, combine butter and sugar. Beat until combined and smooth.

2. Add wet ingredients.
Add the milk and vanilla to the butter mixture. Blend again, scraping the sides if necessary.

3. Add dry ingredients.
Add the flour, baking soda, salt, cinnamon, ginger, and nutmeg to the mixture. Blend until combined, scraping the sides again so that the cookie dough is even.

4. Bake.
Chill the cookie dough in the refrigerator while you preheat the oven to 350 degrees Fahrenheit, about 10-15 minutes. Line a baking sheet with parchment paper. Scoop dough into rounded tablespoons and space them about an inch apart. Bake at 350 degrees for 16 to 18 minutes.

Remove cookies to a cooling rack. Then store in a covered container at room temperature.
