When I think of fall recipes, I often picture hearty stews, roasted root vegetables, and casseroles. But when the weather is still warm well into fall, you want something fresh and a bit lighter.
This salad is so delicious! Crisp lettuce, crunchy apples, and salty feta are the perfect combo. You can make this using leftover chicken from another meal, but I’ve included cooking some simple chicken with the recipe below.

How to make harvest salad with chicken
Ingredients
- 1 pound chicken breast
- salt and pepper, to taste
- 1 tablespoon olive oil
- 1 head romaine lettuce
- 2 ribs celery
- 4 green onions
- 1 red apple, like fuji or gala
- about 1/4 cup balsamic dressing
- 1/4 cup feta cheese, crumbled
- 1/4 cup dried cranberries
Instructions
1. Cook the chicken.
Start by dicing the chicken into bite-sized pieces. Season with salt and pepper. Heat a tablespoon of oil in a skillet and saute the chicken until cooked through. Set the chicken aside to cool.
2. Prep the vegetables.
Wash the lettuce, celery, green onions, and apples.
Cut the lettuce into small pieces. I usually rinse the leaves, then cut them into skinny ribbons and give them a few turns in the salad spinner. Slice the celery, green onion, and apples into bite-sized pieces.

3. Mix the salad.
In a large bowl, combine the lettuce, celery, green onions, apples and cooked chicken. Toss together with the balsamic dressing to coat everything. Add feta and cranberries. Toss just a little bit to mix.

This salad has all the best flavors of fall: apples, cranberries, and balsamic dressing. It’s really perfect for late summer and early fall when it’s still maybe a little hot and you don’t want to turn on the oven.
This is a really filling supper. It fed my family (2 adults and 2 kids) without anyone being hungry again later. If you like, serve it with some crusty french bread.
