I think every kid loves banana pudding. The combination of crunchy vanilla wafers, sweet banana, and creamy pudding is a classic. I decided to update the familiar recipe but keep it simple by making it into a pie for Pi Day. {Pi Day is March 14 every year because of the mathematical term, 3.14 for short.}
I swapped the traditional vanilla wafers for an equally simple graham cracker crust. Then I dressed it up with some whipped cream and a sprinkle of cinnamon sugar, just for fun.
This pie is so easy to make that after you’ve made it once, you don’t really need the recipe to make it again. I love a dessert that I can make in my sleep!
How to make banana pudding pie
Ingredients
- 1 graham cracker pie crust
- 1 banana
- 1 box instant vanilla pudding
- 1-3/4 cup milk (as needed for pudding mix)
- whipped cream
- cinnamon sugar (2 tablespoons sugar + 1 teaspoon ground cinnamon)

Instructions
To make cinnamon sugar, combine both ingredients in a container with a lid and shake to combine. Let the “dust” settle for a minute before you open the lid.
Slice the banana into thin medallions and place them in a single layer inside the pie crust.

In a large measuring cup, combine the pudding mix and the milk and whisk until combined. Pour the pudding mixture over the bananas and spread evenly. Chill until pie is set; at least 30 minutes.

Spray whipped cream in a generous layer over the top of the pie. Sprinkle with cinnamon sugar. I use this ball tea strainer to dust.
Slice and serve immediately.

Tips:
This pie is so quick that you can really make it as a last minute dessert. If you’d rather make it ahead of time, just chill the pie without the whipped cream until serving time. Then add the whipped cream just before serving.
I used the spray can whipped cream because that’s what I had on hand. You could also use the tub variety, just spread it across the pie with a spatula.

If you really love banana and want a stronger flavor, add a second layer of banana slices on top of the pudding – after it’s chilled but before you add the whipped cream.
