I have unofficially declared this the summer of chill. As a work-at-home mom of two, most of my summers dissolve into chaos quickly while I try to get too much done every day. This year we are skipping all the busy plans and just having fun.
We’ll spend more time hanging out with friends and less time worrying about to-do lists. More time eating yummy food and less time worrying about messes.
I’ve even come up with an easy dessert that I can throw together for a casual weekend cookout. It requires no cooking and only a few basic ingredients. I was inspired by the new Skittles America Mix, which I ordered via Amazon Prime.
I think Amazon Prime was created to help people chill and love being able to place an order without worrying about added shipping costs or getting to a minimum purchase amount. Plus, no matter what I need, it’s usually at my front door in two days.
No-bake cheesecake cups recipe
Note: I used a stand mixer for this, but a hand mixer or hand whisk (and some arm muscle) will do fine too.
Ingredients
- 24 vanilla wafer cookies
- 8 ounces plain cream cheese
- 1 cup heavy whipping cream
- 2 cups whole milk
- 1 regular (3.4 ounces) package instant vanilla pudding mix
- 1 package Skittles America Mix
The Skittles America Mix is available for a limited time*. It has the same classic sweet flavor you know in a mix of red, white, and blue. With flavors like yumberry and strawberry, it’s the perfect combo for summer recipes like these no-bake cheesecake cups.
*If you can’t find this exact Skittles mix, substitute any red/white/blue candy. Or of course, you can use any color combo to fit your party theme.
Instructions
1. Prepare the cookie cups.
Let the cream cheese sit on the counter and come to room temperature, for about 1 hour. Meanwhile, set out 6 dessert cups and place 4 vanilla wafer cookies in the bottom of each cup.
They should just cover the bottom but can overlap a bit. You can use whatever single-serving dishes you have – bowls, glasses, etc.
2. Mix the filling.
When the cream cheese is soft, whip it in the mixer bowl with a whisk on low for about 1 minute.
Add the heavy cream and whip again for about 1-2 minutes. The mixture should be smooth, but it doesn’t need to get fluffy like whipped cream.
Add 1 cup of milk (that’s half the total milk) and mix just to combine. Add the pudding mix and mix to combine again.
Finally, add the last 1 cup of milk and mix to combine. The dessert should be smooth and will probably be pretty thin.
3. Fill the dessert cups.
Pour the mixture over the cookies in each cup, filling them to about a half-inch below the top of the glass.
4. Chill and decorate.
Put the dessert cups in the refrigerator and let the mixture start to set up for about 10 minutes.
Then op each dessert cup with a handful of Skittles and refrigerate until ready to serve.
