I’m always experimenting with party mix recipes to find the best snacks for Thanksgiving and Christmas get togethers. My family loves curry, so I came up with a simple recipe that’s buttery and highlights the smoky flavor of curry.
Note that this is a generic dry curry powder blend sold in American grocery stores. I used this exact curry from Walmart. It’s not spicy.
This is a great quick recipe to make when you want a crunchy fall snack mix that is made without nuts!
How to make curry chex mix
I make this on the stovetop because I like using my giant stock pot to stir everything without spilling. You could melt the butter in the microwave if you have a large enough mixing bowl to add all the other ingredients.
Ingredients
- 6 tablespoons butter
- 2 teaspoons soy sauce
- 1 teaspoon lemon juice
- 1 teaspoon salt
- 1 tablespoon curry powder
- 6 cups rice Chex cereal
- 2 cups mix-ins, such as pretzels, rye chips, or nuts (optional)
Instructions
1. Melt butter and add seasonings.
Melt the butter and add the soy sauce, lemon juice, salt, and curry powder. Stir to combine.
In a large pot on the stovetop, melt butter over medium heat. Add the soy sauce, lemon juice, salt, and curry powder. Stir to combine and turn off the heat.
2. Toss with cereal.
Add the cereal to the hot butter mixture in the pot and toss gently to coat the cereal.
3. Bake in the oven.
Preheat the oven to 250 degrees Fahrenheit. Pour the cereal mixture onto a large baking sheet and spread it out evenly. Bake it in the oven for 15 minutes. If it still feels moist, you can stir and bake it for another 5 minutes, but I don’t usually do this. When done, remove the baking sheet from the oven and set it aside to cool until you can handle it, about 15 minutes or so.
4. Add mix-ins (optional).
Pour the cereal mixture into a large bowl, storage container, or gallon zip bag. If you like, add your favorite mix-ins and stir them into the cereal mix. I added 2 cups of rye chips to this version.
