Greek turkey burgers are a family favorite. My husband has been making them for years and every now and then they are requested instead of regular beef burgers.
He threw a few on the grill alongside the beef burgers and hotdogs at our Memorial Day cookout this year and they disappeared instantly.
If you think turkey is bland, you’ll be pleasantly surprised. This recipe is loaded with flavor, just like my Mediterranean turkey bowls.
The trick to cooking a good turkey burger is the extra ingredients. Turkey is lean so an egg or some breadcrumbs work like magic to hold them together. And because turkey is pretty mild alone, the added spices really sing.

Why won’t my turkey burgers stay together?
Turkey is very lean. If you check the package, yours is probably around 7% fat. (If you’re making a beef burger, you probably go for the 80/20 meat, which means 20% fat.) The addition of egg in this recipe will help the patties stay together.
If your ground meat is really wet after adding the eggs, you can add up to 1/4 cup of breadcrumbs. Your uncooked patties should stay together, but not stick to your hands too much.
What cheese and veggies are good on turkey burgers?
For my Greek turkey burger recipe, I used feta cheese, romaine lettuce, red onion, and tomatoes. For the dressing, I used Bolthouse cucumber ranch. You could substitute with these ingredients:
- Instead of adding feta inside the burger, add a slice of provolone cheese on the top.
- Swap the romaine lettuce for baby spinach.
- I like the flavor of red onions, but white onions are fine (and a bit more mild).
- Instead of the dressing, try tzatziki sauce.
What side dishes go with turkey burgers?

You can also substitute Cavender’s Greek Seasoning instead of making your own with the spices below.
Ingredients
- 2 pounds ground turkey
- 2 eggs
- 2-3 tablespoons Greek seasoning
- 1 teaspoon dried dill
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- 1/2 teaspoon ground thyme
- 1 tablespoon dried rosemary
- 2 teaspoons dried marjoram
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- Combine all the spices in a jar with a lid and shake to combine. Store covered in the pantry.
- 1 teaspoon each salt and pepper
- 1/2 cup feta cheese
- 8 brioche hamburger buns
- romaine lettuce, red onion, and tomato for garnish
- cucumber ranch dressing
Instructions
1. Mix up the patties.
Combine turkey, eggs, seasonings, and feta in a large mixing bowl and blend thoroughly. The best way to do that is just with your hands.
Divide the mixture into eight equal sections. Roll each section into a ball and flatten it to about half an inch thick. You can also use a burger press to get them exact.

We have tried several burger presses but weren’t really happy until someone gave us this burger patty press. It is amazing!
2. Grill the turkey patties.
Cook the turkey burger patties on the grill outside or on a grill pan on the stovetop until cooked through. The timing will depend on how you’re cooking them, but the internal temperature needs to be 165 degrees F. On a charcoal grill, we cook these for about 7 minutes per side.

3. Chop vegetables.
For the burger toppings, wash and cut the romaine lettuce into burger-sized pieces. Slice the onion and tomatoes thinly.
4. Assemble the Greek turkey burgers.
For each serving, place a patty on a bun and top with dressing and vegetables.
