There’s nothing quite like an old-fashioned ice cream soda, aka coke float. You can make it with any combination of soda and ice cream and the result is delicious.
Try this galaxy drink for a colorful and tasty tribute to the amazing colors of the Milky Way galaxy.
I tried making this a few different ways. Ultimately simple vanilla ice cream ended up the best, but if you’re looking for more color, try using your favorite rainbow-colored variety. Alternatively, add a pop of color with sprinkles!

What is galaxy syrup
I was inspired to make this recipe when I came across Galaxy Syrup. It’s a simple syrup made by Torani in their Puremade line, which is made with cane sugar (instead of corn syrup). It has a dark purple color and tastes like a mix of raspberries and rum.
Which, according to some astronomers, is what the Milky Way galaxy might taste like too…? The ingredient is ethyl formate. It’s in this syrup and also found in a large cloud in the center of our galaxy.
Weird? Yes. Delicious? Also yes.
How to make a galaxy drink
Ingredients
- 8 ounces ginger ale
- 1 ounce Torani galaxy syrup
- 2 scoops vanilla ice cream
- sprinkles, optional

Instructions
1. Combine soda and syrup.
Pour the ginger ale into a large glass and add the galaxy syrup. No need to stir, it will combine right away.


2. Add ice cream.
Add 2 scoops of ice cream to the top of your drink. Top with sprinkles if you like. Serve immediately.

The ice cream will probably start to melt right away. The carbonation of soda also tends to turn ice cream into a thick foam that will give it more of a galaxy swirl.
