Guys, I have discovered the perfect waffle recipe. It is light and fluffy and healthy and oh-so-full of flavor. Don’t worry, I’m not keeping it to myself. I knew as soon as I tasted these the first time that I had to share. Everyone needs these cinnamon raisin waffles. Everyone. I have made them twice just this week.
I have loved waffles since I was a kid. I remember most Saturday mornings, my mom would make a double batch and me and my siblings would slather them in butter and syrup before running off to watch cartoons. Waffles and Smurfs. And Alvin and the Chipmunks. Fraggle Rock. Okay, back to breakfast.
These waffles are easy. They’re a variation on my whole-grain waffle recipe. Of course, you can change up the kind of flour, sugar, etc. that you use to meet your allergy/diet needs.
Cinnamon raisin waffles
Ingredients
- 2 cups flour
- 1 tablespoon ground cinnamon
- 1 tablespoon baking powder
- 2 tablespoons sugar
- 3 eggs
- 2 cups milk
- 1/2 cup melted butter or oil
- 1 teaspoon vanilla extract
- 1/2 cup raisins
Instructions
Waffles are one of the easiest things to mix up.
Combine the dry ingredients in a mixing bowl. {flour, cinnamon, baking powder, sugar}. Combine the wet ingredients in a different bowl or a big measuring cup. {eggs, milk, oil, vanilla}. Pour the wet into the dry and stir to combine.
Don’t add the raisins to the batter. The first time I made these, I just tossed them in. Naturally, they all sank to the bottom. Just sprinkle a handful on top of each batch right after you pour it in the waffle iron and they will be perfect. No need to measure each batch.
Bake the waffles in your waffle iron according to its directions. My waffle iron holds about a cup of batter and cooks until the light goes out.
This recipe makes five 4-part waffles in my waffle iron. Serve them right away, with or without toppings. These will keep in the refrigerator for a while. Just reheat by toasting.
My kids don’t do Saturday morning cartoons like I did. When you can watch whatever you want on Netflix any old time, it isn’t quite the same. Still, I have to appreciate the ability to watch MY cartoons any time too. I just found Mr. Peabody and Sherman {the cartoon – not the new movie} on Amazon Prime.
I really love these cinnamon raisin waffles, even if they aren’t quite what my mom used to make.
