I used to think it was silly to post sandwich recipes on One Mama’s Daily Drama. I mean, who needs to follow a recipe to make a sandwich?
Me, apparently, because I have come across a lot of great sandwich ideas on several of my favorite food blogs.
So don’t think of this recipe so much as step-by-step instructions, but more as inspiration for your lunch or dinner. This sandwich is easy to make and only takes four ingredients. It’s much more than your classic kids’ grilled cheese, but you’ll probably have to make one for the adults and kids in your house.
I’m debating whether to try making this with sliced avocados instead of mashed. What do you think?
Bacon avocado grilled cheese
The ingredients and instructions here are for four sandwiches, but it’s easy to make more or less as needed.
I made this using my All-Clad panini press. It’s basically two pieces of coated cast iron. If you’re thinking about whether you should buy one, it’s definitely a pricey tool. It makes a huge difference in my sandwiches though {not just this one}. The press heats the sandwiches evenly and gets a nice toast on the outside.
Ingredients
- 8 slices bacon, cooked and cut in half
- 1 package mashed avocado
- 16 slices provolone cheese
- 8 slices wheat sandwich bread
Instructions
Preheat a panini press on the stove over medium heat.
For each sandwich: Layer one slice of cheese, approximately 2 tablespoons of avocado, 4 half-slices of bacon, and a second slice of cheese between two slices of bread.
Heat each sandwich in the panini press until the cheese melts and the bread is toasty – about 5 minutes.
Serve hot right away. This goes great with a side of seasoned fries or chips.
