Pizza should be its own food group because I could eat it every day. I could also probably come up with enough different ways to make it that I wouldn’t get bored. That’s kind of how I came up with this recipe for pepperoni pizza rolls. You’ll definitely want to try this!

Sometimes the best recipes are the simplest ones. My bacon avocado grilled cheese sandwich is an instant family favorite. So what do my kids love almost as much as bacon? Pepperoni.
I try to cook healthy meals. Really, I do. But the other stuff is just so good!
My daughter is actually the one who assembled these. She’s 12, but this is easy enough that much younger kids could help too. Of course, an adult may want to move the pan in and out of the oven.

Ingredients
- 1 package pepperoni
- 8-ounces shredded mozzarella cheese
- 8-count refrigerated biscuit dough
Instructions
Preheat the oven to 350 degrees Fahrenheit and get a 12-count muffin pan. Open the biscuit dough and separate each biscuit into two pieces. I chose the layered biscuits, but regular ones will just need a little more work to separate.

For each pizza roll, hold half of a biscuit in your hand. Add 2 or 3 pepperonis and about a tablespoon of mozzarella.

Put the other half of the biscuit on top and pinch the edges together all the way around. The cheese can be a bit unwieldy, but try to get it all in. The bits that stick out too far will burn a bit. It’s okay if the dough stretches a little.

Place each of the pepperoni pizza rolls in the cup of a muffin pan. This helps them keep their shape and brown all over. Bake in a 350-degree oven for about 10 minutes or until the biscuits are golden brown.

Serve hot with marinara sauce for dipping.
This is so simple that you almost don’t need a recipe. It makes a great snack anytime or supper on a busy weeknight. Just toss together a big salad and you’ve got a complete meal.
