Texas peaches are on par with some of the most desirable foods in the world. I’ve heard of people traveling from outside the state, just to get fresh Parker County peaches when they are at their peak season. We love peach crisp at my house, partly for how easy it is to throw together. It isn’t the most travel-friendly food though, so I decided to come up with a one-handed alternative: peach cobbler muffins.

BIC challenged me to participate in the Month of Merry Marking. I needed to make a seasonal treat for my coworkers and incorporate the #PeachParfait marker. There was only one problem: I work from home. The idea of treating myself to something peachy sounded nice, but not exactly in the spirit of the season. I opted to make my peach cobbler muffins for Hubby’s coworkers.

Peach cobbler muffins recipe
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 2 eggs
- 2 cups peaches, diced
- 1/2 cup honey
- 1/2 cup butter (1 stick), melted
- 1 teaspoon vanilla extract
- For the topping:
- 1/4 cup rolled oats
- 1/4 cup brown sugar
- 2 tablespoon all-purpose flour
- a pinch of cinnamon
- 2 tablespooons butter, soft
Instructions
Preheat the oven to 350 degrees Fahrenheit and put muffin liners in a 12-cup muffin pan.
Combine the dry ingredients in a mixing bowl and set aside. Combine the wet ingredients in another small bowl. Add the wet ingredients to the dry mix and stir thoroughly.
Divide the muffin batter evenly between muffin cups. Each one should be filled right to the top.
In another bowl, combine the dry ingredients for the topping. Cut the butter into cubes and gradually mix it into the dry mix until it resembles coarse crumbs. To be honest, I always do this with my hands.
Spoon the topping over each muffin and tap down gently. Bake the muffins at 350 degrees Fahrenheit for 22 minutes. You might need a minute less or more, depending on your oven.

I resisted the urge to give these muffins to my coworkers and set them off with Hubby. He reported back that they were a big hit.
