Springtime is here. Summer vacation is just around the corner. At my house, that means it’s time to start planning my annual Memorial Day party. I don’t really know how it got started. I think we just invited a few friends over to grill on a day we all had off from work and school. We had just moved from an apartment to our first {rental} house and were pretty psyched about having a backyard.
Since then, it has morphed into a semi-large gathering of friends that is a tradition. Of course, it doesn’t hurt that I love any excuse to host a party. I also love coming up with new recipes to try out on my friends at said parties, so today I’m making up a batch of Starbucks Spring Blend coffee ice pops.
About Starbucks Spring Blend
You guys know I’m a big fan of eating seasonally. That doesn’t have to just be limited to fresh produce, either. There are plenty of brands that have special products only available during a certain season and Starbucks is no exception.

If that sounds a little complicated, here’s what I think:
This is a light and smooth coffee that doesn’t have the same feeling as what you probably drink in the winter. It is pretty mellow, meaning it doesn’t have the strong flavor of a dark roast. Or the bitter aftertaste of a blonde. (<- Or is that just me?) This coffee tastes great on its own, hot and freshly brewed in the morning. It also makes a killer iced coffee with added flavors for the 3 p.m. wake up I seem to need every afternoon.
Coffee ice pops recipe
Ingredients
- 3 cups brewed Starbucks Spring Blend coffee, brewed and chilled
- 1 cup heavy cream
- 1/4 cup vanilla sugar syrup
Instructions
Combine all of the ingredients in a measuring cup and stir. I used flavored syrup that I had on hand. You could also make up your own by combining honey or white sugar with vanilla extract. (I recommend a quarter cup of sweetener and a teaspoon of vanilla. Heat it on the stove until it melts enough to pour.)
Pour into an ice pop mold. Freeze for 6 hours or until solid.
A note about kids and coffee. I let mine have it on occasion, in very small amounts. They don’t like the taste of straight coffee anyway, so they’re usually drinking a few tablespoon worth in a glass of milk.
My ice pop molds hold a quarter cup of liquid. That comes out to 3 tablespoons of coffee per serving, which really isn’t much. I think it’s fine for an occasional party treat and probably healthier than other certain treats on sticks. Use your own parenting judgment here.

These coffee ice pops turned out really yummy. They are just perfect at 3 p.m. when it is already 85 degrees in April. I’m really excited to share them with everyone on Memorial Day.
There’s a reason they are called the lazy days of summer. This recipe is so easy to mix together and pop in the freezer. I’m planning on coming up with several tasty variations between now and summer.

Coffee ice pops with Starbucks Spring Blend
Ingredients
- 3 cups brewed Starbucks Spring Blend coffee, brewed and chilled
- 1 cup heavy cream
- 1/4 cup vanilla sugar syrup
Instructions
- Combine all ingredients in a measuring cup.
- Pour into ice pop molds.
- Freeze for about 5 or 6 hours or until solid.
