When I was a kid, I absolutely did not eat fresh green beans. I loved canned green beans, but not fresh.
My husband was the same way, so as adults, we only cooked canned green beans for the kids. No fresh green beans. The kids loved canned green beans, so we ate them weekly and they would not eat them any other way.
I don’t even remember how it happened, but once time we decided to get some fresh green beans from the farmer’s market. They were delicious and now we eat fresh green beans all the time.
They take some time to prepare since you have to trim off all the stems, but it’s totally worth the effort.
If there is a vegetable that you definitely didn’t like as a kid – green beans or anything else – you might be surprised to find that you actually like it as an adult.
How to make sausage skillet meal
The sausage skillet meal is amazingly good with fresh green beans. I’ve also made it with canned green beans and it tastes great, which is handy when you’re in a hurry. Even with fresh green beans, this recipe is pretty quick and comes together in half an hour or less.
My recipe was inspired by this kielbasa and summer bean salad, which is a great cool summer recipe.
Ingredients
- 2 12-ounce packages beef sausage or kielbasa
- 1 tablespoon minced garlic
- 1 large green bell pepper, about 1/2 cup diced
- 1 medium white onion, about 1/2 cup diced
- 2 cups fresh green beans, trimmed {or 2 cans}
- 1 can navy beans, drained and rinsed
- salt and pepper, to taste
Instructions
The most time-consuming part of this recipe is chopping everything. Spend about 10 minutes prepping and the cooking time is only about 10 minutes more. Dice the sausage into bite-sized pieces and cut the bell pepper and onion into half-inch pieces.
Heat a large skillet on the stove. Cast iron is my preference, but not required. Add the sausage and saute over medium heat until it starts to brown, about 5 minutes.

Add the garlic, bell pepper, and onion. Heat and stir until the onions become soft and translucent.
Add the green beans and navy beans. Heat and stir for about 5 minutes. Season with salt and pepper.

Serve hot, immediately. This is a pretty filling meal on its own but goes great with bread or a salad.

Ingredients
