Greek and Mediterranean ingredients are tasty and healthy. Whip up this quick and easy meal for a fast weeknight family supper. Mediterranean chicken and orzo is made with chicken, veggies, and orzo for a filling meal that won’t leave you feeling stuffed.

This is a family recipe that Hubby and I created together. The flavors are a great combination that all four of us enjoy. It just utilizes the stovetop, so if you are trying to avoid cooking during the hot summer, this is a good one. It also contains very little meat but is quite filling. For a vegetarian alternative, you could substitute tofu in place of the chicken or add a few more veggies and just leave out the meat. The whole recipe is pretty flexible so if there is one ingredient that you love (or don’t) just change the amount.
Mediterranean chicken and orzo recipe
Ingredients
- 1 cup uncooked orzo
- 1-1/2 pounds chicken breasts
- Greek seasoning blend
- 1 green bell pepper
- 1 average sized onion (I used white or red)
- 1/4 cup olives (kalamata or black)
Instructions
- Bring water to a boil and cook the orzo according to the package directions. A little goes a long way so 1/2 cup uncooked is about 4 cups cooked.
- Meanwhile, dice the chicken into bite-sized pieces and season generously with Greek seasoning. Chop the pepper, onion, and olives into bite-sized pieces (or smaller if your kids will only eat one of those if they don’t see it).
- Heat a skillet, and add a splash of olive oil. Saute the chicken until it is done and remove to a paper towel.
- Saute the veggies until tender and add the chicken back in. Toss to heat and combine.


You can either toss the olives in the skillet and stir together or serve them separately and let everyone add them to their bowls.
Serve the chicken and veggie mix over the orzo or toss it all together. We usually serve this Mediterranean chicken with a Greek salad.

Makes 4 servings (2 adults, 2 kids), but easy to double if you’re feeding a bigger group.
