Drama of the week
There’s not too much going on around my house. Technically it’s fall, but the temperatures have stayed in the 90s. The weatherman says it’s going to be cooler and raining later this week, but we’ll see.
This week’s meal plan is simple recipes that I’ve made dozens of times.
Here’s what we’re eating this week:
Monday – creamy pesto chicken pasta
If you can’t find or don’t care about the no-drain pasta, you can easily cook regular pasta in a second pot and stir it in.
Tuesday – Tex-Mex beef tacos
Taco Tuesday. I seriously need new photos for this post.
Wednesday – Mediterranean chicken and orzo
A quick and easy family favorite. This goes great with a Greek salad or pita and hummus – or both.
Thursday – sheet pan chicken and vegetables
Trimmed chicken breasts and corn on the cob, seasoned with salt and pepper. Bake for 30 minutes at maybe 400 degrees. Add the green beans and cook another 15 minutes.
Friday – stovetop chili, fritos, and cheese
Yes, I live in Texas and make my chili with beans.
Saturday – chicken bacon mac and cheese
I often take a shortcut by using our favorite boxed macaroni and cheese, but you can cook the mac and cheese from scratch. Stir in diced cooked chicken and crumbled bacon.
Sunday – steak, baked potatoes, and salad
Hubby is grilling the steak and potatoes. I’ll toss together a salad with lettuce and whatever veggies are still around.
