Happy Monday! Welcome to new readers and welcome back to old ones. I start off every week by sharing my meal plan for the week ahead. This post includes what I plan to cook for my family for supper this week with links to recipes when necessary.
Drama of the week
Meal planning is kind of an obsession for me. I love doing it because it means I have a plan for what I’m going to buy and cook. It helps me stick to my budget, plan ahead for the next day, and make sure my family is eating mostly healthy foods.
If you’d like to start meal planning but are feeling overwhelmed, you might be interested in my Meal Plan Like a Boss email course. It includes a meal plan and grocery list printable and then takes you step-by-step through planning over several days.
If you’ve already taken the course, I’d love to get your feedback. Was it helpful? Did I miss something important or is there something that should be clarified?
Here’s what we’re eating this week:
Monday – chicken pot pie
Not with peas. Broccoli instead. Isn’t her lattice crust gorgeous?
Tuesday – teriyaki beef stir-fry
Hubby is cooking, so I picked something I wanted to eat but not cook myself.
Wednesday – chicken bacon pasta with spinach
The best way to get my kids to eat spinach.
Thursday – breakfast quesadillas
Basically breakfast burritos, but much cheesier.
Friday – homemade pepperoni pizza, salad
We’ve eaten frozen and delivery lately, so it’s time for some scratch cooking.
Saturday – hamburgers and fries on the grill
To cook fries on the grill, cut them into big “steak fries” planks and toss them with olive oil and Italian herbs.
Sunday – TBD
Cheers! Linking up at Menu Plan Monday.
