Happy Monday! If you are looking for meal planning ideas, you’ve come to the right place. Each week I share my weekly meal plan for my family of 4. It’s fall here in Texas, so I’m planning warm comfort foods with autumn vegetables.
Drama of the week
I’m back to my regular meal planning routine this week after I let my daughter plan all her favorite foods last week for her birthday. By the end of the week, everyone had noticed that we didn’t eat very many vegetables. While the kids had fun eating less-healthy meals all week, they do like some vegetables. And I think we all agree that at least one vegetable per meal is pretty good.
Here’s what we’re eating this week:
Monday – tuna alfredo with broccoli
This is an easy weeknight meal. I’m adding frozen broccoli, which I just throw in with the pasta for 5 minutes.
Tuesday – chicken green bean casserole
We’ve eaten this one quite a bit.
Wednesday – cottage shepherd’s pie
The best thing about this recipe is that it can be just meat and potatoes, or you can add lots of other vegetables. I’ll be including carrots, onions, and maybe celery. Other root vegetables, like parsnips, are fun if you can find them.
Thursday – harvest salad with chicken
This salad is surprisingly filling and has such a great flavor combination.
Friday – chicken noodle soup
This is another recipe where you can add more vegetables. I’m making it with carrots, onions, and celery. I might throw in corn. You could also change up the ingredients a bit for a “theme.” Ex. Asian chicken noodle soup could use ramen noodles, cabbage, and soy sauce.
Saturday – slow cooker chili
Chili is a great weekend recipe because you can cook it all day and let everyone serve themselves whenever they’re hungry.
Sunday – TBD
I have a feeling it’s going to be a long week, so I’m planning leftovers or something quick that uses whatever we haven’t eaten this week.
