Happy Monday! We’re down to the last week of November and past Thanksgiving, which means Christmas starts any minute now, right? During this busy time of year, I try to keep feeding my family mostly-healthy homemade meals every night. Read our plan below.
Drama of the week
I’ve decided that we need to eat more fish. Pretty much the only fish we ever eat is canned tuna. I think tuna’s healthy, but I don’t want to eat it every week. I’m trying to find some other fish recipes that we will all like that aren’t just fried fish. I’m trying a new recipe on Monday that sounds simple and if you have a recipe your family likes, leave a comment so we can try it.
Here’s what we’re eating this week:
Monday – parmesan garlic crumbed fish, salad
For the salad, I’ve got romaine, broccoli, carrots, and cheese.
Tuesday – chicken pot pie
I make my filling in an oven-safe pot that’s the same size as a refrigerated pie crust. No need to put it in a new dish. I can just add the crust and pop it in the oven.
Wednesday – beef stew
I’ll just throw some stew meat, carrots, potatoes, onions, and celery in the slow cooker with some seasonings for about 6 hours.
Thursday – chicken apple skillet
We’re having this a second time. It was fantastic the first time. The only swap is broccoli instead of brussels sprouts.
Friday – 30-minute stovetop lasagna
This really is quick.
Saturday – stromboli
Hubby is cooking. Use this pizza dough and just fold it over the pepperoni and mozzarella.
Sunday – cheesy southwest chicken soup
Simple comfort food in a one-pot meal.
