Happy Monday! This week is a bit different from my usual meal plan. I’ve got half the week planned. After Thanksgiving, we’ll just eat leftovers or make things from what we have in the pantry and refrigerator. See my weekly menu plan below.
Drama of the week

We may or may not eat leftovers for three days. Sometimes they last… and sometimes they’re gone too fast. Plus, my birthday is this weekend. I’m turning 34, so I don’t really have any plans. I’ll wait and see what everyone feels like doing after a long holiday week.
Here’s what we’re eating this week:
Monday – chicken bacon pasta
Instead of diced tomatoes, I make this with a jar of tomato pesto. It makes the sauce a bit saucier and adds a ton of flavor.
Tuesday – sweet potato black bean tacos
I haven’t made this in a while, but it’s a great one-pan dish.
Wednesday – cheesy TX chili mac
I prefer to cook the pasta separately, but you can make this in one pot if you don’t mind the pasta a bit starchy.
Thursday – turkey, gravy, stuffing, cranberries, mashed potatoes, green bean casserole, rolls – and lots of pie!
We always make the main dish and have our guests brings sides. This year I procrastinated on shopping until it was too late to thaw a frozen turkey. The fresh ones are always smaller, so I ended up purchasing two 12-pound turkeys. This was just the excuse Hubby needed. One will be cooked in the oven as usual and the other will be smoked.
