Happy Monday! How was your weekend?
We spent Saturday outside planting and planting. We did potatoes, cucumbers, strawberries, pansies, petunias, and roses. (Pictures coming Wednesday!) Last year we planted three or four potato plants and got about forty pounds. That may sound like a lot, but it lasted us only two months. This year we planted twelve. I’m hoping we can store enough to last quite a while. It always amazes me how long homegrown produce will last, compared to store-bought.
Here’s what we’re eating this week:
Monday – tuna salad
Not the sandwich version, but a mixed green salad with whatever veggie are appealing and a can or two of tuna.
Tuesday – strawberry honey mustard chicken, broccoli, and yeast rolls

Wednesday – beef enchiladas, refried beans, and avocado
Thursday – mediterranean chicken, orzo, and pita with hummus

Friday, Saturday, and Sunday – This is the beginning of spring break, so we will not be cooking!
