We had a whirlwind weekend, dropping the kids off to spend spring break with grandparents. On top of that, last week was pretty breezy too, getting everything ready. We didn’t really stick to our meal plan at all. We did have the strawberry chicken on Tuesday, which was a little sweet for me and Hubby’s tastes. The kids loved it though, although they said they couldn’t taste the strawberry!
This week, I am cooking just for two. On the one hand, we try to make the things we love but the kids do not. On the other hand, it is hard to make just enough of anything for two people. Do you ever get a break from cooking for your kids? What do you like to do or make?
Here’s what we’re eating this week:
Monday – mediterranean chicken, orzo, and pita with hummus
Note: The chicken recipe also comes from The Gypsy Kitchen: Transform Almost Nothing into Something Delicious with Not-So-Secret Ingredients, which Kindle owners can download and read for free from Amazon.
Tuesday – chicken fried steak, mashed potatoes, corn on the cob
Wednesday – steak, salad, and yeast rolls
Thursday – pesto chicken pasta with zucchini
Friday – date night
Saturday – beef stew
Sunday – stir-fry
