Happy Monday! This is my weekly menu plan for July 22nd through 28th. In the summer, I always spend more time with the kids while they are at home. This really cuts down on work time, so our budget is a little tighter in the summer. Even on a tight budget though, we can still eat healthy family meals. This week I am making a few more things from scratch that I might normally buy at the store for convenience. I’m also using up things I already have in the pantry or freezer. You will still see a balance of meat and meatless meals, plus lots of fresh produce. Does your grocery budget change regularly or do you spend the same year-round?
Here’s what’s on my menu plan this week:
breakfast options – waffle sandwiches, lemon poppy seed muffins
*using half white, half whole grain wheat flour
snack options (also as a side for lunch) – watermelon, yogurt, peanut butter crackers, carrots and hummus, popcorn
Tuesday – Mediterranean chicken with orzo
Wednesday – beef lettuce wraps, vegetarian eggrolls
Thursday – kielbasa potato casserole, green beans
Friday – homemade chicken nuggets, fried okra, corn on the cob
Saturday – dinner with family
Sunday – spaghetti with red sauce
