We stuck to last week’s menu pretty closely and everything went well. The Mediterranean tilapia was really delicious and might just be our family new favorite way of eating the fish. We ended up too tired to cook after chores on Saturday, so the chili was bumped to Sunday and we used gift cards to grab some fast food instead.
You might’ve noticed that I didn’t plan anything for Sunday anyway. I usually leave one day open, knowing that we will either move meals around and substitute during the week or have lots of leftovers. Do you stick to a meal plan closely or make a lot of changes throughout the week?
Here’s what we’re eating this week:
Monday – barbecue kielbasa, Knorr pasta side, and frozen broccoli
*Does anyone have a great broccoli recipe? We generally just steam it and add salt and pepper, but that can get pretty boring.
Wednesday – chicken fajitas
Thursday – shepherd’s pie
Friday – Stouffer’s Farmer’s Harvest veggie lasagna
