A new year. Back to school. Back to work. That also mean time to get back on the healthier bandwagon! I’ve been planning meals even though I haven’t been posting them, but they haven’t all been very impressive. There were a lot of cans. And frozen things. Here’s what we’re eating this week.
Monday – Hoppin’ John
*We visited family on New Year’s Day, so I had to make my obligatory bean-sausage-rice dish the next day. Don’t worry though, I put in extra beans to make up for it.
Tuesday – Mediterranean style herbed tilapia with couscous, salad, and pita bread
Wednesday – Vegetable stew (cabbage, carrots, tomatoes, potatoes, and onion)
Thursday – Chicken alfredo with broccoli and rolls
Friday – Apple chicken stir-fry
*I’m actually going to substitute leftover pork loin here.
Saturday – Black bean chili with corn bread
