Happy Monday! This is it – the last week before our big move. I tried to cut down our pantry and think we did pretty well. This week’s sale at Kroger could just about restock it though. I’m thinking I’ll just leave most of the pantry items in their shopping bags and carry them over when we get the keys.
Last week we stuck to the menu, in spite of the chaos of packing. Our only variation was moving Saturday’s tuna alfredo (which, by the way, was so awesome that I’ll be posting the recipe later) to Sunday. Since Sunday was TBD anyway, we ended up grabbing some Wendy’s while running errands on Saturday. If I’m going to go through a drive-through, Wendy’s is the one. This week’s menu isn’t exactly healthy and full of fresh produce. I’ve got a kitchen to pack (and then unpack) and convenience foods are awfully gosh-darn convenient.
Here’s what we’re eating this week:
breakfast options – cold cereal
lunch options – PBJ, cheese and crackers, bean burritos, tuna crackers
snack options – yogurt, strawberries
Monday – pasta with homemade red sauce, green beans, yeast rolls topped with garlic butter
Tuesday – Zatarains red beans and rice with andouille
Friday – *Moving Day!* frozen pizza
Saturday – *Moving Day!* TBD
Sunday – Football game day snacks: soft pretzels, taquitos, chips and dip
