The weather this weekend was just perfect for spending outdoors. We got all the leaf-raking done last week, so this weekend was time for mowing and getting the garden ready for spring planting. I can’t believe in about two weeks we will be starting that again! Hubby also removed a dead tree from the backyard and we planted a new exciting one, but more on that later.
The veggie lasagna we tried last week was just okay. Flavor was good, but it was fairly mushy. I don’t know that we will try it again, but maybe I can find a good (quick) homemade version. The chicken and dumplings recipe was a little more time-consuming than a busy weekend allowed for, so we will try again this week.
Here’s what we’re eating this week:
Monday – bacon chicken and dumplings
Tuesday – hamburgers and fries
Wednesday – pork chops, canned corn, and salad
Thursday – garlic mushroom pasta
Friday – [home date] steak, mashed potatoes, and green beans
Saturday – [brinner] egg and chorizo burritos
