Happy Monday! Last week’s menu plan was a disaster. I planned everything well, but was not smart with shopping. I think I ended up making three trips to the grocery store and Hubby also made one. And we were still out of eggs and cheese by the weekend. Two pounds of cheese and a dozen eggs in less than a week? Oops. So this week I am hopefully more organized. I will say that the veggie wraps were a-ma-zing. So they get their own post on Wednesday.
I also made some homemade graham crackers over the weekend. We used them to make s’mores with the Endangered Species chocolate that Hubby got everyone for Easter and marshmallows that we toasted over the gas stove. Doesn’t this look indulgent? Everyone ate two!
Here’s what we’re eating this week:
Breakfast options – granola, cold cereal (Arrowhead Mills Puffed Millet – I found this at Sprouts for $2! I hope the kids love it.), bacon cheese waffles*
*The cookbook version has precooked, crumbled bacon in it.
Lunch options – tuna salad with homemade mayo, PBJ, nitrate-free lunchmeat, leftover waffles
|My version of Lisa’s granola used dried fruit instead of nuts|
Snack/side options – apples, broccoli/daikon with ranch, leftover homemade graham crackers, rice cakes, pretzels, dried fruit
Monday – kale pesto pasta with chicken and broccoli, rolls
Wednesday – sausage potato bake
Thursday – potato leek soup, rolls
Friday – Family night muffin party!
We always eat a fun food and watch a movie together on Fridays. I have lots of muffin recipes that I’ve been wanting to try, so I decided I’ll just bake up all of them and we can do a taste test.
Saturday – farmer’s market stir fry
Sunday – slow cooker chili
