Happy Monday! I hit the ground running this morning. With two holidays coming up, I’ve got a lot of planning to do. Plus, after a weekend craft show, my house is a disaster. Not the kind of “disaster” you find when you go to a friend’s house and she says, “Ignore the mess” but the house is immaculate. I’m talking grass all over the living room rug, every dish in the kitchen dirty, and evidence that boys use our bathroom. I started off by making a list of lists. Tell me I’m not alone in this. I need to make a list for Thanksgiving dinner shopping, Thanksgiving dinner guests, Christmas gifts, holiday travel schedules… Plus, you know, a 40-hour work week has to fit in there somewhere. Fortunately, I made the most important list of all last night: my meal plan for the week.
This week I’m cooking lots of warm, filling meals. I’m also planning to make some pocket pies with pumpkin and a few batches of baked doughnuts. The kids have requested that I mix up some hot cocoa mix too.
Here’s what’s on my menu plan this week:
Monday – chicken tikka masala (using Saffron Road simmer sauce), rice, naan
Tuesday – loaded oven baked nachos
Thursday – potato soup, tuna melts
Friday – salsa verde chicken enchiladas, refried beans
Saturday – slow cooker chili (double batch)
Sunday – chorizo, rice, and bean soup
