Happy Monday! This week I’m trying to keep it simple. Hubby has a dentist appointment this week. Friday is Halloween and Sniffles is having a sleepover this weekend. The weather is getting colder (again) and I think this is about the time of year that it actually stays that way. I’m not a big fan of cold weather, but I’d rather it stay cold than yo-yo back and forth between 60 and 90 every other day.
Last week’s meal plan went all wonky. It started off fine, but then I forgot to prep the beans for one meal. You know how that goes. By the end of the week, I’d rearranged a few meals, made things that I hadn’t planned, and run out of chicken and bread. The new meal on the menu was the Caribbean sweet potato stew. It was good-ish. I enjoyed it and it was really filling. The kids were not fans of the coconut milk. I think I could tweak it and try again, but it isn’t something we will be adding to the regular rotation.
Question of the week: How do you handle Halloween candy? Let the kids stuff their faces one day, then toss the rest? Ration it out over weeks? I’d love to know what works for your family.

Monday – chicken and veggie stir-fry
Tuesday – tacos
Wednesday – chicken pot pie
Friday – sandwiches (roast “beast” and “monster” cheese, ie. roast beef and muenster cheese)
Saturday – pizza
Sunday – TBD
