Menu Plan Monday

Happy Monday! It’s time again to share my menu plan with everyone. I have to confess, I’m kind of in a food rut. We have been eating the same-ish things over and over, or at least it feels that way. This week’s menu is really not inspired. The kids are still visiting grandparents, so I’ trying to cook from the pantry. Seriously, there are 10 things on my grocery list today. Last week’s meal plan was wonderful. Everything was good, but man, those burgers. I cannot believe how good they were with just one simple ingredient! Don’t worry, I’m sharing that recipe later this week.

I’d love to know what interesting things everyone is eating this summer. I love fresh summer produce, but I’m out of good ideas. On top of cooking for just two this week, we have a craft show this weekend. That means no time to cook and probably fast food. Does anyone know a good place to eat in Amarillo?

I’m keeping it short and sweet today so I can get back to my to-do-without-the-kid list.

Here’s what’s on my meal plan this week:

breakfast – oatmeal, yogurt

lunch – pasta, quesadillas

Monday – burgers again

Tuesday – {meatless} salad and baked potatoes

Sunday – frozen pizza {I love Aldi’s nitrate-free pepperoni}

    I’ve been cooking a lot lately. A ridiculous amount really as hubby and I have gone paleo, but we’re living with my in laws at the moment (long house buying drama) who aren’t paleo, which means I just cook way more than I want to with minimal leftovers. SIgh. Anyhow, I’ve been using a lot of cabbage (unstuffed cabbage because I’m lazy and it’s quicker), or unstuffed peppers? My son has recently decided to boycott vegetables of any form, so we make a traditional Dutch dish a lot – loaded mashed potatoes with bacon and leafy greens. Otherwise, I make a lot of salads with grilled chicken. Pasta with zucchini noodles instead of spaghetti.

      Those all sounds good! I’ve never tried zucchini noodles before, but we do like to use spaghetti squash sometimes. I recently discovered that I can bake potatoes in my toaster oven, so we are eating a lot of potatoes too.
