Happy Monday! With the Memorial Day holiday on Monday, this makes for a short week. It doesn’t mean my to-do list is short, though, so I’ve got a meal plan to make sure I get supper on the table every night. See what I’m cooking below.
Drama of the week

We hosted a cookout on Monday, so this week’s meal plan post is a bit later than usual. That means I’m going to spend most of the week feeling like I’m running behind.
Here’s what we’re eating this week:
Monday – hot dogs on the grill
Tuesday – tortellini with chicken
This was so good the first time that I made it, I’m doing it again so I can get photos for the blog.
Wednesday – taco quesadillas
Tex-Mex taco meat, cheese, and black beans in big tortillas – cooked flat like a quesadilla.
Thursday – California chicken bowls
An easy favorite.
Friday – barbecue chicken pizza
Frozen crust dough and bottle sauce make this one pretty quick.
Saturday – brisket, corn, green beans, rolls
Hubby is smoking the brisket. All the sides are instant.
Sunday – pasta primavera
An easy and delicious way to use up whatever vegetables are leftover at the end of the week.
