Happy Monday! This week I’m cooking lots of spicy foods to combat spring allergies. Check out my weekly meal plan and get recipes to cook simple homemade meals, mostly from scratch.
Drama of the week
I had a weird moment of panic while typing up this meal plan post. When I went to Pinterest to grab the links for the recipes below, it wasn’t working. I could browse, but not search. I’ve got something like 7000 pins, so unless I know I just pinned something in the past few days, I search for it.
It was like the intro to a scary movie. Imagine the voice-over guy saying, “In a world without Pinterest…”
In all seriousness, if you use Pinterest for meal planning and saving your favorite recipes, what would you do if it was suddenly gone?
If you’re like me, you would probably freak out and wonder how you were going to cook and wonder how you became so dependent on one social media site when you know the Internet is constantly changing.
So I’ve decided I’m going to use my Printable Recipe Binder to organize not just my own recipes, but the ones I use from my favorite bloggers too. I’ll just print them off and slide them into the clear sleeves. Most blogs have a recipe card at the bottom of the post – like I do – so I can easily print and save the recipes.
Just in case the Internet apocalypse comes and I don’t remember where my favorite recipes came from.
Here’s what we’re eating this week:
Monday – chicken curry, rice
I picked up a jar of tikka masala so this will be easy.
Tuesday – black bean soup
This is spicy and so filling, even though it’s meatless.
Wednesday – halal cart chicken and rice
We’ve had this once before and like it.
Thursday – southwest breakfast hash
Basically stir-fry but with breakfast ingredients. I’ll add sausage.
Friday – chicken enchiladas
Using salsa verde from a can. You can find this recipe in my eBook.
Saturday – lasagna
The frozen variety.
Sunday – hamburgers, wedge fries
On the grill, if the weather is nice; on the stovetop grill pan if it isn’t.
Cheers! Linking up at Menu Plan Monday.
