There’s not much going on this week. The kids – along with their cousin – are headed to my dad’s house. I’ve got a whole week sans kids. I might just sit around in my pajamas playing Nintendo. Or paint the bathroom. Or sleep until noon and then eat cookies for breakfast. Okay, probably not.
What would you do with a week by yourself?
One thing I almost always do when the kids are away is skip grocery shopping. Hubby and I are pretty good at making meals from whatever we have on hand. Of course, that is always easier with only two people to feed. So for my meal plan below, all I need to pick up is some bread. Really, I could make that myself with a few baking ingredients.
I am still working this week, so it’s not like I’m on a total vacation. In fact, not only will I be writing, I’m also using the quiet as motivation to get back into video. I’m planning on making a few quick tutorials for my very-neglected YouTube channel.
I feel like I’ve never been good at video, so I’m planning to do a few quick foodie how-tos to get started. If you have any requests, let me know in the comments below.

Monday – chicken cordon bleu ranch wraps
I discovered these last week and they sound incredible. Plus, I have everything but the flat bread already.
Tuesday – stuffed pitas
This is my own recipe, which I’m working on for my subscriber cookbook‘s summer section.
Wednesday – dinner out
I’m taste-testing a new summer menu at a restaurant that Hubby and I love. I’ll be sharing my experience in an upcoming post.
Thursday – loaded oven nachos
This is an easy recipe to make with whatever you have on hand. I’ll be cooking and adding taco meat.
Friday – TBD
Saturday – TBD
Sunday – dinner with family
My dad is cooking, so I assume it will be big hunks of meat on the grill with tons of veggies for sides.
