Happy Monday! Actually, it’s mostly a cold and tired Monday at my house. We’ve still got to eat, though! Read my weekly meal plan below. It includes cooking in all weather because it’s going to be both hot and cold here in DFW this week.
Drama of the week
I’ve been having tech problems since Friday. My hosting company is doing some updates to their servers and from what I can tell, it’s breaking the internet. I’ve only been able to sign into One Mama’s Daily Drama sparingly so if I disappear and don’t post again for a week, you know why.
This week the weather is going to go from 50 to 80 to 40 this week, so my meal plan below looks like I’m cooking for all seasons here. Fortunately, in Texas, you can buy charcoal year-round so I’m going to take advantage of those warm days and cook outside.
Do you grill year-round or only in the summer?
Here’s what we’re eating this week:
Starting with something easy.
Tuesday – Greek beef kabobs, pita bread, tzatziki sauce
It’s going to be in the 70s so Hubby is grilling!
Wednesday – southwest pasta salad
Hubby will grill the chicken on Tuesday so I can just toss it all together.
Thursday – bean burritos
No recipe. Just canned beans and shredded jack cheese in big flour tortillas.
Friday – slow cooker chili, cornbread
One of my favorite all-purpose meals that feeds hungry teens.
Saturday – chicken enchilada casserole
My brother-in-law made this a few weeks ago and it was delicious. Basically, don’t roll your enchiladas, layer the tortillas flat.
Sunday – slow cooker Mediterranean chicken casserole
