Happy Monday! We are on the end of a four-day weekend here. It’s sunny and will get up to 70 this afternoon, so it’s hard to believe we are in the middle of winter. I always try to make the most of these unexpected good days by opening the windows. Sometimes it seems like the cold, overcast days go on forever, so it’s literally a breath of fresh air.
We had two new recipes on the menu last week. Both were a hit. I definitely recommend the slow cooker Tuscan chicken stew or the Mexican bean soup if you are experiencing actual winter where you are.
This week we have open house at the school. Other than that, nothing much is going on. I always forget how un-busy January is. Probably because as soon as its over, the next 11 months are always packed. What’s on your agenda this week?
