Happy Monday! This is my weekly menu plan to feed my family of four. If you’re new to meal planning or just need a few ideas, see what I’m cooking and a few tips for making it as quick and easy as possible.
Drama of the week
Last spring, we built a raised bed for our herb garden. This spring we’re working on a bed on the other side for vegetables. It’s a bigger area and the yard needed more prep. Hubby is also building a really cool raised bed that’s a bit different than the first one.
I’ll be sharing that on the blog later this spring once we have it all in place. It’s going to look really great and although we have a pretty big backyard, it’s something you could use in a small space too.
Here’s what we’re eating this week:
Monday – honey lemon chicken with rice
I’ll add a few extra vegetables, maybe green bell peppers and green onions, and serve it over rice instead of with spaghetti.
Tuesday – Tex-Mex tacos
Fast. Easy. If I cook 2 pounds of the taco meat, we have leftovers for lunches through the week.
Wednesday – one pot pizza tortellini bake
This one is new to us, but it sounds super easy and good.
Thursday – sheet pan chicken and asparagus, 30-minute rolls
I’ll put both on a lined baking sheet, season with lemon pepper, and bake at 375 degrees for about 20-30 minutes.
Friday – barbecue chicken subs; potato wedges
I’ve never had white barbecue sauce and I’ll probably just use my favorite recipe instead.
Saturday – tuna alfredo
Requested by my kids. Possibly so I wouldn’t put any other fish recipe on the menu.
Sunday – spaghetti and turkey meatballs
Alton Brown’s meatball recipe is the best ever. You can substitute whatever ground meats you want.
