Menu plan: Feb 13-19

Start the week off with a plan for what you’re going to eat for supper each day. This is my weekly meal plan. It includes what I’ve got planned to cook for my family of four, including two hungry tweens.

Drama of the week

We tried another new fish recipe last week. In case you haven’t been following along, I’m trying to cook fish more often and not just in the form of tuna alfredo. The recipe was Mexican chopped tuna salad wraps and it turned out pretty good. The recipe is loaded with flavor and even if your kids don’t love canned tuna, they still might be willing to try this.

Here’s what we’re eating this week:

lunch/snack ideas: easy tuna salad on bread or crackers,  Doritos-flavored pretzels, homemade hummus and veggies

 

Monday –  chicken bacon mac & cheese

This recipe is in my cookbook, but the pasta/cheese base is the same as my chicken fajita mac and cheese.

Tuesday – teriyaki beef with rice

We eat a lot of stir-fry, so I’m excited to try this new, fast recipe.

Wednesday – chicken, canned green beans, and stuffing

Easy night. My favorite store-bought seasoning for chicken is called Chicken S**t. Yes, my kids like to ask for it by name.

Thursday – slow cooker chicken and potato soup

Lots of slow cooker recipes are actually too fast, so I’m pretty excited that I found one that will actually take all day.

Friday – pepperoni pizza

Start with a homemade pizza crust or a store-bought one.

Saturday – TBD

I think my kids both have school events this day, but I’m still not entirely sure what the schedule is.

Sunday – pasta and meat sauce

I prefer homemade red sauce, but sometimes I need a meal that requires almost no effort and opt for jarred sauce.
