Drama of the week
I’ve been sharing my meal plan almost every week for six years.
That’s a lot of recipes.
At times, it has been critical. By sharing it here on the blog, it held me accountable for making a plan every week, even when I didn’t really feel like it. At times, it has been a bit of a chore, especially when it serves as a reminder that we’ve gotten in a rut… or eaten tacos and sloppy joes every week for a month.
So for 2018, I’m changing it up.
As part of a few other changes and new things I’ll be doing, I’m switching to sharing my weekly meal plan to once per month. I think this will do two things.
First, it will let me focus on a really thoughtful and detailed meal plan to share each month. Second, it will give me more room in my blogging schedule to do more creative posts – the recipes and crafts that are the core of One Mama’s Daily Drama.

Here’s what we’re eating this week:
Monday – bacon apple salad with chicken
I love to turn a side salad into a main dish by adding chicken, then serving it with a side of bread.
Tuesday – beef barbacoa, flour tortillas and corn salsa
I’m making this in the slow cooker. And also hoping for leftovers.
Wednesday – slow cooker chicken and stuffing casserole
This is a variation on a dish we eat pretty often. If it can be converted to the slow cooker, I’m sold.
Thursday – sheet pan chicken and squash, and green beans
I’m substituting acorn squash.
Friday – pizza
From the freezer. Nothing special.
Saturday – slow cooker meatloaf, maybe mashed potatoes
This was a bit hit when I made it a few weeks ago.
Sunday – Mongolian beef ramen
My daughter loves instant ramen. I love taking the noodles, throwing out the sauce packet, and making something really yummy.
