Happy Monday! Another new week is here and it’s time for my weekly menu plan. This week I’m making easy but filling dinners to feed my family of four. Get the recipes and my notes below.
Drama of the week
Today is the first day of school for my kids. They’re both really looking forward to seeing their friends and starting new classes. I’m looking forward to them having something to do all day.
There’s something about back to school that makes me want to organize. When the kids are in school, I have to follow a schedule better. No putting off dinner and bedtimes. No ignoring chores.
We’ve been working together to get their rooms organized. They both have desks for homework that have been buried under a mess since May. I also reorganized our family command center. And once I get started cleaning and purging, it tends to roll over into other areas. Hubby and I spent a few hours on Sunday cleaning out the garage, which is where I put anything that I don’t know what to do with.
Do you make back to school season the time to get organized and start new routines or do you prefer to do that only for New Years?
Here’s what we’re eating this week:
Monday – sausage skillet meal
An easy one pot meal that needs just a little prep to be ready in about 20 minutes.
Tuesday – chicken caesar pasta salad
This recipe is pretty simple and all the ingredients can be made ahead of time and then tossed together with the dressing when you’re ready to eat.
Wednesday – beef and bean burritos
I don’t have a recipe for this, but it’s just taco meat with canned refried beans and shredded cheese, wrapped in tortillas.
Thursday – pineapple chicken stir-fry with rice
I like making stir-fry at the end of the week because I can use up whatever vegetables are still in the refrigerator. This week will probably be pineapple, bell pepper, and onions.
Friday – stove top chili with tortilla chips and cheese
This one was requested by my son when he heard me talking about a chili cookoff. I don’t usually make this when it’s 90+ degrees outside, but maybe I’m just in the mood for fall because it sounds perfect right now.
Saturday – chicken, potatoes, and corn on the grill
Nothing fancy here, but Hubby’s cooking.
Sunday – TBD
