Happy Monday! It’s our last week of summer vacation. The weather outside can best be described as “hot rain” and we’re all ready for a change. See what I’m feeding my family of 4 this week.
Drama of the week
This summer seemed to fly by. My family and I didn’t really do many of the things I hoped we would. No great adventures. No big projects completed. We didn’t even swim in the pool that much.
While I’m a bit disappointed, I also don’t really have regrets. Sometimes you have to go through a season in maintenance mode. We did what needed to be done to keep up and most of our free time was filled with lazy hours at home watching Netflix or playing video games.
Yes, summers with the kids at home are numbered. But trying to cram in too much activity isn’t any better than doing nothing at all. Forced fun is not fun.
So we’ll head back to school next week, but just because summer is over doesn’t mean there’s no room for anything fun. In fact, I might even say that we will have more time for fun.
Having a routine with set hours makes everything move more smoothly. We can get more done in less time with a set beginning and end. And when we get into that habit, it’s much easier to find and enjoy the breaks.
Here’s what we’re eating this week:
Monday – breakfast hash
I’m doing a simpler version of this recipe with sausage, eggs, frozen hash browns, and onions and peppers.
Tuesday – chicken burrito bowls
I actually came across this recipe as a sponsored pin on Pinterest and love how simple it looks.
Wednesday – one pan creamy pesto chicken pasta
This is an easy meal that’s perfect for busy nights.
Thursday – dinner out
A back-to-school event that includes food saves me from cooking and trying to squeeze it into the schedule.
Friday – chicken tikka masala with rice
We’re still in love with this jarred sauce from Aldi. It’s hard to beat convenience some nights.
Saturday – chicken fried steak, potatoes, green beans
Hubby cooks on Saturdays!
Sunday – TBD
