Happy Monday! August is here. The summer weather is crazy hot. And we’ve started the countdown to back-to-school time. Today I’m sharing my meal plan for the week ahead. This week I’m in the mood for some weeknight family meal type recipes. Many of them are one-pot dishes and over the weekend, Hubby will be in charge of cooking.
Drama of the week
At my house we have exactly three weeks until school starts. That’s still plenty of time for some end-of-summer activities and fun. I like to plan ahead, though. Over the next few weeks I’m planning to put together a list of my favorite easy weeknight family suppers.
If you have kids that are heading to school this month, I’d love to get your thoughts. What are some of your favorite meals to serve on school nights? What kind of meals would you like to see that would make your weekdays easier? And what’s your biggest struggle when it comes to getting supper on the table during the school year?

Here’s what we’re eating this week:
Monday – schnitzel made with chicken, mashed potatoes, green beans
Tuesday – Buddha’s delight stir-fry
I know the purpose of Sara’s recipe is to eat tofu, but we’ve tried it and it just isn’t something my family really enjoys, so I’ll be making this with chicken.
Wednesday – cowboy dinner
Thursday – chicken alfredo with broccoli
To add broccoli to this dish, I just add the chopped broccoli to the pasta water for the last 2 minutes of cooking. Then just drain and add it to the dish as usual.
Friday – porcupine skillet
Saturday – pulled pork sandwiches, macaroni and cheese
Follow the nacho recipe for making the pork, then serve it on buns instead of with all the fixings.
Sunday – TBD
