Happy Monday! Start the week off with a meal plan and avoid the six o’clock panic over what to feed your family. This week’s menu includes mostly one pot meals for busy nights when you just want to throw something together.
Drama of the week
I mentioned last week that Hubby and I had our first convention this weekend. We mostly ate granola bars and takeout because I just can’t figure out how to make real food good to eat while sitting in a convention center.
After a long 3-day working weekend, we were pleasantly surprised that our 13-year-old made an elaborate brinner for us when we got home Sunday. Teach your kids to cook! It will be a lot of work in the beginning, but it is definitely rewarding on those nights when you just don’t have the time or energy to do it yourself.
Here’s what we’re eating this week:
Monday – cowboy dinner
An easy one that my daughter likes to help cook.
Tuesday – chicken caesar pasta salad, bread
This one is easy and filling. You can even make it ahead on a crazy-busy day.
Wednesday – pasta and meat sauce
Sauce from scratch is lovely, but sometimes a jar sauce is the time saver I need.
Thursday – chicken pad thai
My kids don’t really like stir-fry, even though we eat it almost weekly, so I’m trying to find relatively similar recipes they might like.
Friday – cilantro pesto chicken and pasta, bread
Cilantro is so cheap, but I never use it all up before it goes bad. This week I’ve found a recipe that might solve that.
Saturday – Greek turkey burgers, potato wedges
Hubby is grilling.
Sunday – barbecue chicken pizza
Hubby is grilling the chicken on Saturday and I’ll use a frozen crust so that this is a quick fix.
