Hey, everyone! I have so many good things to share this week that I don’t know where to start. My weekly menu plan post has kind of become a place for me to share more personal things about my daily life, what’s going on behind-the-scenes of One Mama’s Daily Drama, and the ups and downs.
Let me start with you. I’ve spent the past year procrastinating on an eBook for my subscribers and I’m happy to say that part one is done! New subscribers will now get a password to download my ebook, Seasonal Meal Plans. You can read a little more about it HERE.

Meal planning is something that I’m pretty passionate about and I think, judging by the number of people who read my meal plan posts, you are too.
This week is also exciting for me because we are supposed to close on our new home. I haven’t mentioned shopping for a house much. I’m a little paranoid that something will go wrong. I’m planning on starting a new series in June all about first time home-buying and moving in general. I used to share more home remodeling posts, before we moved last time, and I’m looking forward to sharing new ones as we start personalizing our new home.
Okay, time for the meal plan. The reason you’re still reading, right?
Here’s what’s on my menu plan this week:
Monday – chopped salad and baked potatoes
This is an easy and cheap meal. I like to make it on Mondays because I can use up the fresh produce that we didn’t eat the week before.
Tuesday – Tex-Mex tacos
I usually make a big pot of beans – either black or pinto. Beans area a cheap way to fill out a meal inexpensively. I cook just a pound of beef, instead of the 2+ that my family would happily eat.
Wednesday – chicken sweet potato soup
We tried this recipe a few weeks ago and it was wonderful. I’ll be adding more sweet potatoes this time so that we might have leftovers.
Thursday – vegetable white bean hash
Quick skillet meal ready in about half an hour. I’ll probably change out a few vegetables, depending on what I find at the grocery store.
Friday – homemade pizza
I swear, my kids could eat pizza seven days per week and not get tired of it. I have to admit that with so many variations, it’s pretty nice to have one day of the week more or less automated.
Saturday – pasta salad
Pasta salad is nice because I can make it in the morning or even the day before. Then, when I get distracted by projects and look up at 6:00, dinner is still ready.
Sunday – burgers on the grill, sweet potato fries
