Menu plan: April 17-23

Happy Monday! Do you feel like you don’t have time to meal plan and barely have time to cook? My meal plan is perfect for busy families who need easy meals to cook on a weeknight when there are other things going on too. See what I’m cooking this week.

One Mama's Weekly Meal Plan: feeding a family of four on a busy week without takeout!

Drama of the week

When I sit down to write my meal plan and grocery list every week, I start by checking the calendar and the weather. I need to plan easy meals when we have things going on after 5 p.m. and I want to plan meals that don’t heat up the house if it’s going to be hot outside. This week I’ve got both.

First, it’s going to be over 80 degrees with a chance of rain every day.

Then, we’ve got a doctor’s appointment, two school functions, and three work events… plus I have a contractor and a mechanic who should be calling me to schedule work this week.

I could really use an 8-day week here. To make it work, I planned meals that could be made ahead and I did a lot of prep on Sunday.

Here’s what we’re eating this week:

Monday – chicken, corn salad

The corn salad can be made ahead and refrigerated. {Recipe coming later.} The chicken, I’ll season with fajita seasoning and skillet cook.

Tuesday – Tex-Mex taco salad

I will add taco meat. Everything else can be made ahead and refrigerated.

Wednesday – tuna melts; chips and fruit

Tuna, cheese, and sandwich buns.

Thursday – chicken caesar salad; french bread

Like my caesar pasta recipe, but without the pasta or bacon.

Friday – pizza pasta salad

It’s easy to sneak in a few extra veggies.

Saturday – chicken green bean casserole

Delicious comfort food after a crazy week.

Sunday – bean and cheese burritos

Refried beans, cheese, rice, and avocado wrapped up in a tortilla and heated in the panini press.
