Happy Monday! Sunday was the official first day of autumn and it feels like Mother Nature is feeling generous. Here in Texas, it actually feels like fall! (low 60s, high 80s) I got some cleaning and decorating done this weekend, so I’ll be sharing a few of my fall home decor projects later this week.
Last week’s menu went pretty well. We tried two new things and they were both a success. The Thai food on Wednesday was not spicy, but it was very different from our normal fare. The Saffron Road sauce pouch that I used included coconut milk, which gave it a surprisingly cool and sweet flavor. Also, I know I’m behind the bandwagon, but I cooked quinoa for the first time on Sunday. I was nervous because I’ve heard so many people say it is hard too cook or tastes like birdseed. I don’t know what they’re doing, but I found it quick and easy. Plus, it was tasty too. The texture reminds me of couscous or rice. Anyhow, we will be eating it again, this week in fact.
I was feeling pretty lazy when I sat down to make my menu plan and grocery list last night. And also hungry, apparently, because this week’s menu is very meat-centric. You won’t see a meatless meal on here, although I will still try to use smaller portions of it and lots of veggies. There is nothing I haven’t made before. I was going for quick, and I think subconsciously, meals that Hubby is better at making. I think I will have him grill the chicken for Tuesday while he is doing the steaks for Monday so that it is done and ready to go later. Hey, outsourcing saves me time, right?
Here’s what’s on my menu plan this week:
breakfast options – cold cereal, lemon blueberry muffins (with mixed berries in a muffin tin)
lunch options – tuna crackers, pasta, quesadillas, leftovers
snack options – apples, grapes, graham crackers, pretzels, yogurt
Tuesday – barbecue chicken chopped salad
Wednesday – spaghetti with AB’s baked meatballs (sans lamb), canned green beans, simple garlic bread (bakery baguette + butter + garlic powder)
Thursday – balsamic chicken (diced breast, not drums) tossed with quinoa, carrots, scallions, and maybe broccoli
Saturday – dinner with family
Sunday – dinner out (trying a new restaurant)
